Cod Poached in Coconut Milk


INGREDIENTS:

  • 3-4 Cod fillets

  • Salt & Pepper

  • 4 cloves minced Garlic

  • 1 TBPS minced Ginger

  • 1 diced Onion

  • 1 (13oz) can Coconut Milk

  • 2 TBSP Chili Paste or Sambal

  • juice of 1 Lime

  • 1 tsp Fish Sauce

  • Oil

  • Large Skillet with a lid


INSTRUCTIONS:

  1. Pat Cod dry and season with Salt & Pepper

  2. Heat some oil in skillet over medium heat

  3. Add Ginger and Garlic and cook until fragrant. Add Onions and cook until soft.

  4. Pour in Coconut Milk, Chili Paste, Lime Juice, and Fish Sauce. Stir and heat until almost boiling. Once it begins to bubble, back the heat down to a simmer.

  5. Place the Cod Fillets in the sauce and cover the skillet with the lid.

  6. Cook for about 10-15 minutes or until the fish is flaky.

  7. Serve over vegetables such as Sesame Ginger Bok Choy and spoon the sauce over the fish.
