Grilled Chicken Pita

You'll need a grill and some skewers for this one.

INGREDIENTS:

Boneless, Skinless Chicken Thighs

Olive Oil

Ground Coriander

Oregano

Kosher Salt

Ground Pepper

Tomato

Garlic (minced) - I used the jarred stuff

Green Onion (chopped)

Romain Lettuce (chopped)

Caesar Dressing

Pitas (toasted)




DIRECTIONS:

  1. Trim any excess fat from the Chicken and chop into 1 inch pieces.

  2. Toss with Olive Oil, Coriander, Oregano, Salt, & Pepper.

  3. Slide chicken onto skewers.

  4. Chop up Tomato and combine with Oil, Garlic, Salt, & Pepper in a small bowl. Wrap in a foil packet.

  5. Toss Romain Lettuce and Green Onion in a bowl with Caesar dressing and Salt & Pepper.

  6. Grill the chicken skewers and tomato packet over MEDIUM-HIGH. Shake the packet occasionally. Grill until the chicken is done.

  7. Remove from the grill. Open the packet and slide the chicken off the skewers. Try your very best not to eat all of the chicken yet. It's tempting.

  8. Split a Pita, add the salad fist, then the chicken, then the tomatoes, top with additional Caesar dressing or Tahini if you have some.

  9. EAT!
