Easy and freaking DELICIOUS !
3 TBSP Canola Oil
1 TBSP Chili Powder
2 tsp ground Cumin
1 1/2 tsp Garlic Powder
Zest of 1 Lime
3/4 tsp Salt
1/2 tsp Chipotle powder
1 Red Bell Pepper, sliced
1 Yellow Bell Pepper, sliced
1 Yellow Onion, Sliced
1 lb large Shrimp, peeled & deveined
Tortillas (your choice)
Any topping you like for fajitas: Cilantro, Sour Cream, cheese, etc.
Preheat oven to 400°F.
In a large bowl, mix Canola Oil, Chili Powder, Cumin, Garlic Powder, Lime Zest, Salt, and Chipotle. Move a 1/4 cup of this mixture to another bowl for later. Toss the Red and Yellow Bell Peppers and Onion with the mixture in the large bowl. Be sure to evenly coat everything.
Spread the Peppers and Onions on a large baking sheet and bake for 15 minutes or until soft.
Add the Shrimp to the same large bowl and add the remaining spice mixture to them. Toss and stir well to coat the shrimp.
Once the vegetables are soft, add the shrimp to them in the pan and roast for 5 more minutes until the shrimp are opaque. Sprinkle with Lime Juice.
Serve with Tortillas and toppings of your choice.
