Smoked Wings (Spicy Korean + Louisiana)

These are just as good without the sauce.


INGREDIENTS:

2 lbs Chicken Wings

Olive Oil

Wing Sauce (I use Louisiana Wing Sauce)

Korean BBG Sauce (I use CJ Foods)

1 Bottle of Oil for frying (vegetable, peanut, canola, whatever)


DIRECTIONS:

  1. Get your smoker going to 275°F.

  2. Separate Chicken Wings into drummies and flats. Discard the tips or keep them for stocks.

  3. Lightly brush or spay the wings with Olive Oil.

  4. Coat liberally with My Secret Chicken Rub.

  5. Smoke for 1 hour.

  6. While the wings are smoking, heat frying oil to 350°F. I use the side burner of my grill since I'm already cooking outside in the smoker.

  7. After wings have cooked for an hour, fry them for 3-5 minutes in hot oil to crisp the skin. Drain excess oil afterwards.

  8. At this point, they are perfect as they are. If you want to really have some fun, combine equal amounts of Wing Sauce and Korean BBQ Sauce. It's a unique taste and they are SPICY!
