James' Hawaiian Portuguese Bean Soup

INGREDIENTS:

  • 1.5 lbs of Stew Beef

  • 1 Onion, diced

  • 2 Carrots, diced

  • 2 Potatoes peeled, diced

  • 1 15 ounce can of Kidney Beans

  • 1 6 ounce can of Tomato Paste

  • 1 15 ounce can of Tomato Sauce (if you want a thicker sauce you can replace tomato sauce with another tomato paste)

  • 1 Hawaiian Portuguese Sausage (You can substitute it with smoked sausage and 2 strips of bacon or if you want it spicy 1 hot link and 2 strips of bacon bacon.)

  • 1 cup of Macaroni Noodles uncooked

  • 1 Bay Leaf

  • 3 cloves of Garlic

DIRECTIONS:

  1. In a large pot add 2 TBSP of Olive Oil, Garlic and brown all the Meat.

  2. Add 1.5 quarts of Water and bring to a boil

  3. Add Bay Leaf

  4. Boil for 30 minutes (longer if you want it to be more tender)

  5. Skim fat off the top

  6. Add your Tomato Sauce

  7. Bring back to a boil

  8. Add your Carrots, Onions and Potatoes (Depending on how firm you want your potatoes you can add them later)

  9. Add your uncooked Macaron

  10. Let soup cook for another 30 minutes

  11. Start adding Tomato Paste to thicken sauce.

  12. Remove Bay Leaf

  13. Add Salt and Pepper for taste
