Don't mess up the kitchen. You can make this super delicious and healthy dish on the grill.
INGREDIENTS:
2 TBSP Olive Oil
4-5 cups Baby Spinach (chopped)
1 TBSP minced Garlic
1 (15 oz can) Crushed Tomatoes
1 (15 oz can) Chickpeas / Garbanzo Beans (rinsed and drained)
1/4 cup Heavy Cream
4 Eggs
1/2 tsp Salt
1 tsp Pepper (more if you like)
1 TBSP Herbs de Provence (or whatever you like. Italian Seasoning would be fine too)
Sambal
INSTRUCTIONS (for gas grill):
Place a cast iron skillet with Olive Oil onto you grill and heat it to Medium High.
Chop the Spinach and rinse it in a colander.
Toss the Garlic right into the colander too.
In a mixing bowl, add Tomatoes, Chickpeas, Heavy Cream, Salt, and Pepper.
Toss the Spinach and Garlic into the hot skillet and cook for about 2 minutes or until wilted. Stir and toss carefully while it cooks.
Dump your bowl of Tomatoes, Chickpeas, etc. into the pan.
Stir until evenly mixed.
Make 4 dimples in the mix with a spoon carefully crack your Eggs into the dimples. Close the grill's lid and cook until the eggs set. Check on them every couple of minutes until they appear to be done.
Sprinkle with Herbs de Provence and more Pepper if you like.
Carefully ladle sauce and egg into a bowl. Top with Sambal. Mix it up and be amazed at how freaking good this is!
